Bernard Loiseau is in that elect group of 17 chefs to be given 3 stars by the French Guide Michelin. His restaurant/hotel is in an old poste house that was the restaurant of the only 3 star chef to have a restaurant outside of Paris. Loiseau bought the restaurant when the old man died and together with his wife has breathed new life into it while retaining the Burgundian character of this very old building. He has brought to French cuisine light meals with virtually non-fat sauces that loose nothing in taste to the lighter approach. Very modern in style. So just as with Alain Ducasse at the Bastide de Moustiers, we tried to capture both the age of the establishment and the modern, refined character style of the chef's food. |
